TAPPED I tell you!
This week has been busy at work. In preparation for the long holiday weekend I am working ahead and writing my heart out.
My eye has been twitching for almost a week. No not all the time but it spasms a few times a day.
This week I’ve written two press releases, four articles, content for e-mail blasts and countless e-mails.
So please excuse me while I glue my behind to the couch, crack open a cold brew, and watch Tangled. Yes Tangled as in the animated movie. Sometimes you just need a little PG entertainment in your life (while drinking adult beverages). Have you seen Despicable Me? If not go rent it now and I dare you not to love it.
Also I’m thinking of switching from wordpress to tumblr. would you come with me? all my faithful readers? mom? grandma? I know you two are reading.
Last weekend I got a healthy dose of Tijuana memories as our team gathered together for a post trip meeting. I am sure I’m not the only one who is still processing through the trip and trying to discern why God called me to Tijuana.
So far the realizations have been simple. The realization that a life I had planned was different than the plan that God had for me. Though leaving that former life and those plans behind has been incredibly painful, I do believe I am being challenged in this way for a purpose. The plan will be revealed to me slowly.
I’ve spent more time recently processing the things right in front of me and that has taken precedence over processing the rest of my Tijuana trip. My best friend getting married this month was an emotional triathlon, one that I completed with merit but one that definitely left me a bit spiritually depleted.
That is why the weekend get-together was a nice reminder of everything that happened in Tijuana. I think God has revealed another simple lesson to me after this weekend, and that is the need to be part of a community of believers. Over the years there have been seasons where I have been a part of a community of believers and seasons where I have not. Being in Tijuana with people who shared honestly, accepted openly and encouraged spiritual growth really showed me how important it is for me to pursue relationships with people who share my beliefs. And as it is getting easier to talk about my story with fewer tears I think I am getting to a place where I can enter these relationships without being a total emotional hot mess.
Simple things I have learned. But precious none the less.
This past weekend I was honored to stand up in the wedding of a sorority sister, former roommate and dear friend. Congratulations Mrs.Smith. I love you.
I’ve gotten terrible about taking pictures, good thing there was a photo booth at the reception.
Chipolte has got nothin’ on me. Ok that is a lie they totally do. Delicious guac, salty chips and the lime/cilantro rice. I think that is my favorite part…the rice. Mmmmm.
To all you Qdoba lovers, I’m sorry about your terrible taste in fresh Mexican food. Oh yeah that’s right I’m bringing out the food slams. Just like people are either Coke or Pepsi, in my experience a lot of people are either Chipolte or Qdoba.
The other night I felt like experimenting with some things I keep on hand. Rice. Black Beans. Salsa. You know where this is going. I also had cilantro, fresh cilantro to be exact and some lime juice. Mad scientist I tell you!
First I cooked my rice.
1 cup of rice, 1 tablespoon of butter, 1 2/3 cup of water, 1/3 cup lime juice
After my rice was done cooking I put it in a bowl and added:
1 can of black beans- rinsed
1/4 cup of salsa
red onion – I didn’t measure this part but if I had to guess I would say 1/4 a cup
my fresh cilantro – I didn’t measure this part either maybe 2 or 3 tablespoons of cilantro?
1/2 teaspoon coarse salt (I used kosher salt)
1/2 teaspoon ground cumin
1/4 teaspoon pepper
This recipe is by no means ground breaking, but it is very delicious especially if you have a hankering for Chipolte and don’t feel like leaving your apartment. Add a dollop or 4 or guac and scoop with some chips..bliss. I am sure you could make some grilled chicken to add to the deliciousness but that was more involved than I cared to get the other night.
